Easy Hot Chicken Spinach Salad (Paleo)

It’s finally spring, so I used up the last of my winter spinach and onions on this warm, crunchy paleo salad:

  • Baby spinach leaves
  • 2 winter onions, chopped
  • 1 chicken breast, chopped
  • 1/2 cup of baby tomatoes or peppers, chopped
  • 1/2 cup of sunflower seeds
  • apple cider vinegar
  • olive oil
  • salt and pepper
  1. In a little olive oil, saute the onions, tomatoes, and peppers until almost tender.
  2. Add the chicken and sunflower seeds, stirring until chicken is fully cooked.
  3. Pour over the spinach leaves and dress with vinegar, oil, salt, and pepper to taste
